The courses follow Marco Polo's travel history. The first course is Italian, second course is Middle Eastern, Third course is Mongolian and then fourth course is Italian.

Out of curiosity, what other cuisines are you thinking of including in
the feast? It sounds like a very cool event (coming from someone with
an increasing interest in Silk Road cultures)!
