As a rule of thumb, avoid "white stuff". Sugar, flour, potatoes, rice, etc. It
turns out that there is not much difference in the glycemic indices of white
and whole-grain flour. The fine grind means very fast digestion and
absorption. Eventually, you find yourself eating something close to the Atkins
diet--which was an anti-diabetic diet in the 1920s, before the refinement of
insulin.

Also, don't let yourself get hungry. Eat  every few hours, even if only a
snack.

As for pancakes, one egg to 4 oz (1 C) flour to make 2 portions, the egg
doesn't accomplish very much!

My usual breakfast is cheese or eggs. There is a problem, in that the body
requires some carbohydrate for energy, and is very slow in converting fat to
carbohydrate. Even so, if you eat an hour or two before the event you should
be OK. If you find you do have to eat carbs, make sure they have a low
glycemic index. Your metabolism is not identical with any other, so take
advice but then be sure to test how it works for you. I don't actually seem to
need carbs for breakfast, but this quirk has astounded several coaches.
