Lord Britton makes a very good point.  While I enjoy gmail and the
benefits it does give, there are still times when I have a hard time
getting to my mail.  It happens VERY rarely but it does happen.

But yes, trimming your posts is definitely a good thing.  Gmail turns
quotes purple and hides them behind a "show quoted text" link - and
that often includes the signature of the person who's sending.
