Oh, there is a certain splendor to using the power of suction and the principals of gravity and fluid dynamics. 


Put the vessel on the counter or table.
Connect the tube to the cane....
Fill the tube and Cane with liquid (water would work, though you could suck on it like a straw if you like)
Then, sealing the tube end (I use my thumb), 
pop the cane into the vessel. 
hold the end of the tube bellow the level of the counter
Put a bottle on the end of the tube
remove your thumb.


And away you go.


Really, don't fill it much past the base of the neck.


You can squish the tube to stop the flow, or lift it to about the level of the liquid in your vessel, but if you loose the liquid in the tube... you have to start again.


This isn't rocket science, it's just brew.


Relax. (That's what the book says, it's the technical manual... Relax).

So it is ok for a gap at the top.OK. I also have the racking cane,but couldn't figure out how to start  the suction(didn't want to end up like the last time I siphoned gas out of a stranger's car........I'll just get the check valve

Well, I use a racking cane in the carboy which is a rigid length of
lear acrylic tubing with a bend at the top and a cap on the bottom
esigned such that you can use it to skim right at the top of the
ees.  Think upside down mushroom.  The bottle filler is another,
horter length of rigid tubing with the check valve on the end, and
he two are connected with clear vinyl tubing.  If you go to
ww.brewsupplies.com, and go to the first drop down menu "Select
quipment for Making Beer and Wine" and select the option "Bottling
nd Siphoning Equipment" it will take you to a catalog page with good
lear views of the bottle filler and the racking cane as well as the
eplacement cap so you can see how it works.  None of which cost more
han a couple bucks.
If you are truly worried about filling your bottles to the absolute
op, you can fill them to the brim with a measuring cup.  You do want
hem as full as possible, but you'd find the displaced volume of the
ottle filler should provide just the right amount of headspace.  Get
 bottle too full and have a warm day and corks fly, liquid expands
hen heated, not much but it is something to be aware of.  If you have
aybe an inch or so of air at the top of the bottle for the Grolsch
ype you have, or closer to two inches if corked it wouldn't be a bad
hing.
The less you disturb the lees the clearer you can get things without
esorting to filtering or adding clarifiers.  Otherwise we'd all just
ut a funnel in the bottle and turn the carboy up, eh?
