They also make a gadget called  . . . wait for it . . . a bottle
filler.  It goes on the end of your siphon hose and has a little valve
on the end.  You put it in the bottle, and press the valve against the
bottom of the glass.  Flow stops when you lift the tube away from the
bottom.  This way vacuum is never lost and you don't have to restart
the siphon.  Most brew supply places should have it for a few bucks.
