Sounds yummy!



Did you still have some texture to the sauce or was it basically pureed?? I'm trying to figure out how to do it without a Cuisinart.



Were the carrots still pretty firm like stir fry or almost mushy like those cooked in a stew?



Did you have a period reference for this?? (Not really necessary ... I'll be trying this one at home for modern use.? Can't go wrong with my two favorite veggies together.? Yes, garlic is a veggie!)

Since my redaction was done tonight as I went along, I wanted to get it written down before it is forgotten.

1 lb carrots - steam for about 7 minutes, then brown in hot olive oil about 1 minute on a side.

Sauce
1/2 cup cider vinegar
1 whole head of garlic (10-12 cloves)
2 heaping TBS bread crumbs
1/2 tsp ground caraway seeds
1/2 tsp ground mustard.

Roast the garlic cloves for 15 minutes in 400 degree oven.? Peel.? In mini Cuisinart, put 1/4 cup vinegar, all garlic, bread crumbs and spices and mince until a sauce.? Add the rest of the vinegar and stir.? To serve, make sure the carrots are warm, heat the sauce to almost boiling and pour over carrots and serve immediately.
