Here are some of Cariadoc's translations of couscous and couscous recipes from (I think) the 13th century cookbook Kitab al tabikh fi-l- Maghrib aw-l-Andalus fi 'asr al-Muwahhidin li-mu'allif majhul (yes, I copied and pasted that),  commonly referred to as al-Andalus (you can see why).
