When I was last in York (2003) people could sign up via the web to help on one of the ongoing digs--anything from a full day to two weeks, depending on your schedule. In the end I didn't join the dig, but did go by the site and talk with a couple of volunteers while they were washing some finds (Roman glass, but no beads at that point...) So, if you're going abroad it's really worth checking out area archaeological or historical societies/sites for digs you can either volunteer to help with or active sites you can at least visit. It's very cool!

Subject: [MR] BBC: York Excavations
Noble friends,
This weekend the BBC featured a story about finds finds the Hungate archaeological site in York:
http://www.bbc.co.uk/news/uk-england-york-north-yorkshire-15403877
They've dug up everything from a Roman cemetary to Viking cellars and Victorian communal toilets. The dig has delayed new construction on the site for five years. This is a very interesting story, with useful information for Scadians. You jewelry fans will love that beautiful Viking bead.
There is more about the Hungate excavation at http://digh.digitalwelly.com/ . Some of the cool artifacts are shown under "Recent Finds". This site has links to other York resources including the Jorvik Viking Centre and the restored manor Barley Hall. You easily could spend an hour to two exploring all the sites.
Yours Aye,
Lord Mungo Napier, That Crazy Scot
