I assume you're not able to access the academic journals database known as JSTOR? I just did a quick search, and found the following citation that looks to be a good book for you

Ralph S. Hattox, Coffee and Coffeehouses: The Origins of a social beverage in the medieval middle east (Seattle, 1985.)

If you read German, there's at least one article on Ottoman Coffee.
