I assume you're not able to access the academic journals database known as 
STOR? I just did a quick search, and found the following citation that looks to 
e a good book for you
Ralph S. Hattox, Coffee and Coffeehouses: The Origins of a social beverage in 
he medieval middle east (Seattle, 1985.)
If you read German, there's at least one article on Ottoman Coffee. 
If you need me to do a more careful search, let me know. I am able to download 
dfs of articles from JSTOR
