The Irish figure or ceili dance you witnessed is called the Siege of Ennis.
The music is played in 6/8 time, which is a jig. The other typical ceili
dances are danced in 2/4 time, which are reels. Irish set dances tend to be
done in squares, which is where America got square dancing from. An Irish
set dance could be done in the confines of a home or small tavern. The
ceili dances tended to be done longways and required a large hall. (Anyone
remember the Virginia Reel from elementary school gym class?) They are
easier to learn than the set dances. However, Irish dances are generally
not called. Here in Virginia and Maryland, they often teach ceili and set
dances prior to an actual dance session or Ceili. The best way to learn is
to find a willing partner who knows the dances and can lead you through
