As has already been noted, the custom of standing is distinctly modern.
Even as late as the 1960's when I was a student in Cambridge and formal hall
always included a toast to the queen, the only person who stood was the
person making the toast (and that was for audibility purposes). And I was
in a college that at the time was all-female so issues of "role" did not
apply.
Incidentally, it was customary that such toasts were made only after the
last course had been served. (And in a rather different age in the men's
college often were followed, as was the case in military messes, by the
injunction that it was now permissible to smoke.)
In my early days in the Society, that was usually the case as well, but I
have noticed that in Atlantia the toasts have crawled earlier and earlier in
the feast and sometimes come while the first course is still coming out.

Who as Ambassador from the East to the Middle in the 1980's once made the
toast to the Crown of the Middle five times in a two month period (the
Middle was VERY protocol conscious!)

I agree that in Court, hearing is a problem sometimes, but when everyone
else in a feast hall stands and raises their glass, one would think that you
would catch on to what was happening....
