[MR] Feast Menu (with ingredients) for Dun Carraig's A Day in the Middle East

My Lords and Ladies,
The following is the menu for the food that will be served at this
event, to be held on February 17 in the Barony of Dun Carraig
(Mechanicsville, MD). The menu includes items from the Middle East,
Northern India (Mughal) and Mongolia. Food will be served in two
parts. The first of these is a Mezze, which is a kind of dayboard with
period "munchies" available starting right after Court and continuing
throughout the afternoon. Following Court in the evening, there will be
a one-course dinner. The dishes to be served for these two parts include:
*Mezze:*
*Hummus Kasa (Middle Eastern): *chickpeas, red wine vinegar, olive
oil, tahini, black pepper, mint leaves, parsley, thyme, walnuts,
hazelnut, pistachios, Ceylong cinnamon, salt, lemon juice, olives,
caraway seed, olive oil, coriander seed.
*Lauzinaj (Pastry stuffed with almond paste)**(Middle Eastern)**:
*almond paste, puff pastry, sesame oil, rosewater syrup, pistachios.
*Minted Grapes**(Middle Eastern)**: *grapes, honey, lime, fresh mint.
* Nuhul al-Adhra (Virgin's Breasts)**(Middle Eastern)**: *sugar,
semolina flour, almonds, ghee (clarified butter).* *
*Rutab Mu'assal (stuffed dates)**(Middle Eastern)**: *dates, whole
almonds, honey, rose water, saffron, sugar, cinnamon, long pepper.
*Sals Abyad (Walnut Hummus)**(Middle Eastern)**: *walnuts, tahini,
garlic, pepper, cinnamon, mustard powder, lemon juice.
*Sanbusa (meat stuffed pastries)(**(Mughal)**: *water, flour, ghee
(clarified butter), salt, sumac, onion, cumin, clove, cardamom, pepper,
coriander, ground beef, ginger.* *
*Shiraz Laban Bi buqui (Thickened Yogurt with Herbs)**(Middle
Eastern)**: *yogurt, dried mint flakes, celery leaves, leek, salt,
yellow mustard powder, nigella seed, walnuts.
*Subhani (Apricots stuffed with Marzipan)(Mughal): *dried apricots,
marzipan (almond paste).
*Stuffed Eggs(Andalusian--Moorish Spain): *eggs, cilantro, onion
juice, pepper, coriander, soy sauce, sesame oil, salt.
*Zaitun Mubakhkhar (Smoked Olives)(Middle Eastern): *olives, garlic,
zataar (a Middle Eastern herb), walnuts, sesame seeds, sesame oil, cumin.
*Lavash (Fried Bread)**(Middle Eastern)**: *Water, flour, yeas5t,
sugar, olive oil, salt, sesame seeds, caraway seeds, cardamom, flax
seeds, dill.
*Stuffed Grapevine Leaves**(Middle Eastern)**: *rice, vine leaves,
onions, sunflower oil, salt, dill, citric acid, mint, black pepper.
*Pita Bread **(Middle Eastern)*
* Panir (Fresh Goat Cheese) (Mughal)*
* **Fresh & Dried Fruits and Nuts*
* Mango Sharbat: *Mango, sugar, ice.*(Middle Eastern)*
* Lemon-Ginger Sharbat: *Lemons, Sugar, ginger*.**(Middle Eastern)*
* Sekanjabin: *Red wine vinegar, sugar, mint, water.*(Middle Eastern)*
*Feast:*
*Gullach (Mongol pre-cursor to Baklava)*: Egg whites, soy flour,
table cream, water, sugar, pine nuts, walnuts, honey, ghee (clarified
butter.
*Jazr**(Middle Eastern)**: *carrots, salt, water, olive or sesame
oil, white wine vinegar, garlic, cumin.
*Lazizan (vegetable and rice biryani)(Mughal): *lentils, onion,
chickpeas, ghee (clarified butter), garam masala (Indian spice mixture:
cardamom, pepper, cumin, cloves, cinnamon, black mustard seeds), salt,
ginger,), salt, fresh ginger, basmati rice, almonds, raisins.
*Lift Mukhallal (Pickled Turnips)**(Middle Eastern)**: *turnips,
water, white wine vinegar, pickling salt, honey, hot mustard powder.* *
* Rummaniya (Chicken with Pomegranate Sauce)**(Middle Eastern)**:*
chicken, eggplant, zucchini, onion, mastic, cinnamon, coriander, date
syrup, pomegranate molasses, honey.
*Saag (Spinach with Carrots)(Mughal): *ghee (clarified butter),
onions, pepper, cardamom, salt, water, cloves, spinach, carrots, lemon
(garnish).
*Shiwa (Lamb Roast)**(Middle Eastern)**:* lamb, olive oil, salt,
saffron, garlic, coriander, caraway, thyme, sesame seed, black pepper,
verjus, red wine vinegar.
If you have any questions or concerns, don't hesitate ot let me know.
I will do my best to accommodate you needs. Also...I will echo the
pleas of the autocrat: Please, please, get your reservations in as
early as possible. The limit on the feast is 128...so unless this sells
out more than a week before the event, I will not be able to expand
the feast due to difficulty in getting some ingredients.
