Exactly. You simply balance the costs for your budget for the 85 or 90% that 
you expect to pay to reach the break even point. Once break even has been 
reached, you're able to cover any hospitality that you may wish to extend.

I see no problem with having the majority subsidize the meal for others who 
cannot otherwise eat.(though this is wandering away from the high table 
issue a bit) As long as the prices are fair, then there won't be any 
complaints or hard feelings and more people will be able to enjoy the 
experience.
