Do you have any particular *part* of the time period in 
mind, or particular location, or particular art style? E.g., 
Orthodox iconography has a very long and specifically 
detailed set of canons for creating icons.

I assume you're referring to things like "eyes on a plate = 
St. XYZ; a spiked wheel = St. ABC; etc." -- no? Again, those 
were not universal over our whole period and in all places.
