While I agree with most of what you said I wouldn't say that the time
to vacate due to heat never comes... We have a white canvas pavilion
and although the heat isn't as much in a canvas pavilion, it can still
get pretty warm (I certainly can't sleep in it during the heat of the
day).
All of that aside, making our pavilion was one of my greatest SCA
achievements. I definitely love it and wouldn't go back to nylon;
just make sure the canvas of your pavilion is fire retardant and
mildew resistant and you have a good idea how to care for it properly.
Our homemade pavilion has lasted something in the neighborhood of 4
years now, and it's still in good condition. I've done Pennsic in a
nylon and "treated canvas" tent, I wouldn't ever recommend either, but
you do what you have to!
