[MR] On the subjecy of spoiled meat (this time with message, smile)

My husband, Galen of Black Diamond, has done some of this, as he wanted
to make protein snack food for fighting that he could carry in his
pouch, but doesn't like all the chemicals and salt in commercial beef
jerky. He experimented with different cuts of meat (the less fat the
better, as that is what really turns rancid) and different proportions
of salt/brine. Seemed to work just fine and he hasn't died (or even
gotten sick)from it yet.
