There are lots of very good non-alcholic wines out there that could be 
substituted, or the whole wine thing can be subbed with thinned grapejuice 
with some mild vinegar or lemon juice to sour it just a touch.  In any 
documentation subs are allowed if it is written what Should go there and 
What you subbed there and why.
