Since my redaction was done tonight as I went along, I wanted to get it written down before it is forgotten.
1 lb carrots - steam for about 7 minutes, then brown in hot olive oil about 1 minute on a side.
Sauce
1/2 cup cider vinegar
1 whole head of garlic (10-12 cloves)
2 heaping TBS bread crumbs
1/2 tsp ground caraway seeds
1/2 tsp ground mustard.
Roast the garlic cloves for 15 minutes in 400 degree oven. Peel. In mini Cuisinart, put 1/4 cup vinegar, all garlic, bread crumbs and spices and mince until a sauce. Add the rest of the vinegar and stir. To serve, make sure the carrots are warm, heat the sauce to almost boiling and pour over carrots and serve immediately.
