While this doesn't quite answer your question, the following Wikipedia link does have some information about the English obsession with St. George: http://en.wikipedia.org/wiki/Patronages_of_Saint_George#England .

I sincerely doubt that our Corpra would ever entertain the idea of an SCA patron saint. The SCA has to tiptoe carefully around religion(s) to avoid offering offense to anyone, and that is certainly the way it should be.
