These were comments from Master Tirloch that were helping me plan MATO's menu. They might be interesting to everybody.
As a result the menu has been shuffled a bit.

I'm still hoping to delegate Friday night's wine and cheese party. I donate ALL supplies (including alcohol) and you help serve. I will be there but I'm thinking I might be in the kitchen. The beauty of this feast is that a LOT of it can be pre cooked!!

still think I'm going to add a couple more things to this.
For instance sugar plate bowls on the table with walnuts in them at the opening will probably happen...I was thinking about regular pickles but I'm already talking about a cucumber salad so I don't want to overdo cucumbers.
MATO's menu is going to follow the theme of Marco Polo. Marco Polo traveled to many places and learned about all kinds of food.
We have replicated his travel locations in the menu with each course being representative of a place he traveled in the order that he traveled to them.
I like this approach – what would Marco have eaten.
First Course - Italy
Egg plant (not sure how)– Cuccina and even Platina have recipes for eggplant. It was (and still is) a popular dish in Italy and around the globe.
pickled carrots (still working on Italian documentation for this or was this going to move to the Middle Eastern course?)
turnips in sweet and sour sauce
Second Course - Middle Eastern
Shish kabobs (meat and veggie ones separated and meat being a
chicken/pork combo - still researching the marinade)
if you are doing middle eastern – then shish kabobs would not have pork….ever there are veggie kabobs, chicken, and lamb. If you were near the rivers or ocean, you would have fish kabobs as well.

3rd course - Mongolian
Chicken Salad
feel like I need something more here. Will read some more
of April's book which I took home by mistake or maybe my sub conscience was at work!
Mongolian – salad greens with chicken parts
chickpeas in curry sauce of sorts or chickpeas lightly roasted and served by themselves
4th course - back to Italy
preserves over cookies
maybe one or two other things here and at least 2 types of Jam or preserves (still researching this but I think we found almond cookies)
and Pigs in Blankets!!! I still haven't figured out how I'm getting pigs in blankets to high table but it's gonna
happen!!!
I do want a couple points of decadence for high table. Will research that. Maybe that's where I can sneak liver patties in! hehehehehehe
