Did you know that even if you start with Cariadoc's "standard" recipe  
for Sekunjabin, that you can get quite a variation in taste depending  
upon whether you use cane sugar or honey, what type of vinegar you  
use, what type of mint you use etc.

For some discussion on this, as well as other variations on Sekanjabin  
and similar beverages (I don't know if your recipe must be based on  
Master Cariadoc's particular recipe or redaction, or not). see this

Have fun! I remember and impromptu Sekanjaban tasting after a class at  
Pennsic. You can get widely varying tastes using just the usual  
Sekanjaban recipe.
