will be teaching a sausage- making class hosted by the Canton of Rivers
Point at the Colonial Heights Public Library
on Sunday April 15, from 1
to 5 p.m. with a prep session on the previous Saturday:
."We'll be making a period German Bratwurst. I'll be
picking up a couple of pork butts from Sam's or Costco on Saturday, and
prepping them on Saturday.
If anyone wants to go through the process,
I'm happy to have them around, from picking out meat through grinding,
and preparing casing. On Sunday, we'll
season and stuff the ground meat,
and talk about the process. There isn't going to be enough time to do
the entire process without enough freezer space for the
meat, otherwise.
I'll bring the meat, spices, equipment, casing, and handouts.

I
will appreciate having a headcount for Sunday. The handout will have a
collection of period sausage recipes from England, France, Germany,
Italy, and the Catalan/Italian Neopolitan cuisines.
* We'll be doing a
bratwurst recipe from Sabina von Welserin's cookery manuscript.. If anyone wants to work with me on Saturday, doing prep, they need to be at my house
* on Saturday by
11:30am. I'll be leaving to select the meat at noon, and then spend the
afternoon prepping. I'd appreciate knowing in advance if anyone does
want to help on Saturday."
