yeah there is an issue. first, its a competition and some of us chef (or
those other cook types) have a method to the madness that is cooking and
competing.
i get the logistics behind "we will provide you your base, now do something
with it". makes perfect sense. but.......... as a chef its hard to wrap my
head around it unless i know what weight the wings are, how they come (iqf,
fresh, bulk iced, etc) which effects the texture, how they are prepared
before i get them (some folks will cook something days before an event and
then heat them to serve which, if anything is holy, is unholy) and then
there is the whole prep to cook to serve ritual. for me i need fresh packed
3oz hand separated wings intact. i mean if im in a competition with a
fairly meatless and bland protein like a wing. ;^)
i think what we are talking about is a sauce competition based on being
given some pre-cooked, ready to heat, wings of unknown size. if so, then
its cool and we should all plan on some sauces and how we will finish the
unseasoned wings. that, in and of itself, is a fair competition. it
removes all of our own personal touches aside from the finishing
sauce/coating and then the judges can determine from that point which one
they liked the best. nothing wrong with that.
to make it a true competition means allowing each chef (and the rest of you
cooks) decide how and what we wish to do with our wings. but that will be a
much more difficult process and not, i think, what this is dreamed to be
which is a more simple "here is your protein, now sauce it up" kinda thing.

The wings will all be cooked the same way to ensure that the competition is
about the sauce itself. They will be pre-baked and then thrown on the grill
to get heated up.
