Just found some interesting descriptions of stilt-walking in various parts of Europe, including an illustration & description of the stilt-related goings-on in Namur, in a 19th century copy of Popular Science:

Interestingly, the earliest reference these sources have for the stilt-battles dates back to the mid-18th century, but these do seem to be more like stilt-melees than stilt-jousting.
