in two cook shops which served food during an annual medieval fair in
Western Pennsylvania over the course of many years. While not a

Marion had serious medical problems, so I don't think continuing was
an option. As you may know, she died a few months ago.
It's worth noting that Battlefield Bakery did not produce period
food, or claim to, although it was good food and closer to period
than most. The Sated Tyger, on the other hand, which was an earlier
and larger project, did.
I don't see any reason why someone couldn't have a cook shop at
Pennsic producing period food with modern equipment-period food with
period equipment, which is what the Sated Tyger did, would be a much
harder project. There are lots of period dishes that aren't too hard
to make or too exotic to sell. It only requires an entrepreneur
willing to do it and permission from the Coopers.
