Bone, horn and antler were all used as knife scales in period.? Horn seemed to be the preferred non wood choice for items less than ivory or inlay mother of pearl.
Now here is the caveat, the antler handles were shaped as normal handle scales, it is only very late period and post period that the European trend to have the antler "raw" seems to have come about.

A random question for those who have studied knives out there. Is there any
providence for antler handled knives. I can trace back here in the US but it
doesn't take me farther then early 19th century. I was wondering if anyone knew
of any examples appear in our (SCA) scope of time? Thank you so much for any
thoughts, speculations, or even raspberries!
