Food safety is always a concern for a skilled feast cook. Challenges often
include the ability to store foods at safe temperatures before and after
prep, general sanitation, and safe food handling practices.
While not a certification as Gwyn cites in her post, the United States
Department of Agriculture offers a great handout called
Cooking for Groups: A Volunteer's Guide to Food Safety
It is available here:

While many publications and courseware are targeted more towards restaurant
employees, this one hits the mark for the kind of thing that happens in our
kitchens.
It won't get you a certification, but it is good information to have.
If I had the inclination to devote more time to SCAdia these days, this
booklet as a hand out and an inexpensive instant read thermometer would be
the materials at a University class I've occasionally thought about running.
Bottom line, if you plan feasts, if you help out at feasts, or if you think
you might help at feasts, take a look at this booklet, the courseware Gwen
mentions, or even better... both!
