Hi Gen,
 Sorry I must have blanked out when reading this before, thinking "I can do chocolate based on the international chocolate museum, but not coffee" and I totally forgot that a couple months ago someone posted a notice to the ALHFAM list about the new Coffee House at Colonial Williamsburg and they had lots of details and videos of how coffee was traditionally prepared.  I am sure they would have some good resources and may have references that date earlier.
