Milady,
I believe what His Grace was referring to was the occasional practice of, having "legged" your opponent, for the fighter with the upperhand to also drop to his/her knees, thus giving up the advantage.  Some feel it chivalrous/courteous to do so, some feel that by not using every advantage of skill and circumstance that one has to defeat your opponent, you are dishonoring the opponent's ability to respond, even if at a disadvantage.
 
As for the rest of your post, I couldn't agree more.

See the things like that, taking a knee as you described when losing a
fight, that is a great example of being courteous to your fellow fighters.
It is not something that is required (like calling shots) it is an open
display of the honor based part of fighting. I think that taking a knee when
killed is a great thing for both those fighting and those watching.
