I think you've hit the nail on the head in that we often confuse the
modern definition of chivalry with it's equivalent, courtesy. In
period, chivalry was more likened to prowess, or deeds which furthered
the goals of your liege lord. "Courtesie" was a mode of behavior whose
aim was to not offend (in word or deed) your liege lord. It gained
wider use during the time of troubadors as the type of idealized
behavior of a knight , not only towards his liege lord, but also 
extended to his lady.
