Having done this for years for soapmaking, I agree with the methhods her excellency Adendra explained and just thought I'd add a couple more handy tips:
Have a small mesh seive on hand to strain larger chunks out as you go 
You will appreciate having done this whole process outside the next time you have to clean your stove vent fan, aside from the smell
A great tip we found was that when you find a butcher to buy suet from ask them to run it through the meat grinder, they usually will do so and it makes the rendering much faster!
