My experience with tallow has been for soap making, but I suspect that it is
very similar process. It can be done indoors, but you must use fresh beef
fat and it must be rendered over a low to medium flame, otherwise it browns
and becomes more colored. I then filter it through a coffee filter or a few
layers of cheesecloth to catch all the little bits. If you are not satified
with the color, then I would remelt it with an equal amount of water to
rinse it, then set it water and all, in the refridgerator and let it
solidify. Impurities will be contained inthe water layer and the purified
tallow will rise to the top as a solid cake. This is also recommended if you
are trying to reclaim cooking fats, but I have not been as happy with the
fats resulting from that.
