Why not just complete the assignment as given, and then provide a report of
corrective/educational information in private with the instructor about
heraldry.  This way, she can educate the instructor in a way that will not
leave her feeling that her authority is challenged.  She can explain what
bothered her about the information presented to the class and that she did
not wish to create any negative reactions.  I am sure the instructor would
appreciate the information and the effort by her, including citations, etc.
If she will have an opportunity later in the class to give an informational
speech, she could also take that opportunity to talk about heraldry then,
instead.
