Good Morning Lady Gwendolyn (and others of the Tavern),
Is there a reason linen embriodery thread would not work? There is an
embroidery technique called Opus Teutonicum (German Whitework) that
was used quite a bit for altar cloths in the Middle Ages. This
technique has the advantage (for you) of being linen embroidery
(typically white) on a white linen background. You could then launder
the item as needed to remove the wine stains.

Webs has a huge spool of linen thread for about $40. The size is
about the size of a large sewing thread and there's about 5500 yards
per spool. The link is:

Webs also has colored linen available, but then you run into the
challenge of laundering without fading the colored portions. I hope
this helps!

Molly
