Reany and Wilson shows a "Hangere" in 1148 as middle english for hangman. There is also a Roger Hangeman (1310), and a Richard de Hangre (1297).
"Headman" meant "chief" or "leader", so there is no help there.
I have an extensive list of English occupational bynames, but they tend to lean toward the more, um, normal occupations.
