[MR] What does a Principality include?

In theory, a Principality is basically just a larger geographic area
than a Barony with a certain number of members (I recall over 200, but
I am probably not correct there), that has a Prince and Princess
decided in Coronet Tournament. Six months is the typical length, but
that isn't mandatory. You are correct that the Prince and Princess of
a Principality have no claim on the Kindgom throne (although members
of the Principality can fight in the Kingdom Crown tourney as well, it
is a completely separate tourney.)
There are also Principality officers for at least the major offices
(Seneschal, Herald, Exchequer) who report to the Kingdom, but really
that's not dramatically different from how most offices have regional
deputies currently.
The Coronets may or may not be able to give awards that convey
precedence, depending on Kingdom law at that time. There may or may
not be Principality specific awards and orders, again depending on
Kingdom Law.
Principalities have their own name and arms (which need to be
registered with the CoA).
Essentially, it's a group beneath a Kingdom that has a regional identity.
