[MR] OT: Wood care question

We recently discovered my lord's father had stored an old family heirloom  in 
a building outside, without realizing the damage it would go through in the  
20 some years it's sat out there.  It is a large wooden trencher, roughly 2  
foot long, a foot wide and nicely curved, that is somewhere between 100 and 150 
 years old.  His mother used it when making bread.  It is the  worse for wear 
from it's storage and we hope to restore it.  
 
Can someone recommend an oil treatment or wash to help bring back it's  shine 
and protect it?  There is considerable damage to the surface so that  not 
sanding isn't an option, bugs and things have ruined any patina it had and  eaten 
away at the center, but once that surface is removed there is a beautiful  
grain visible.  It is extremely dry however and I fear currently  unsanitary.  
(It has possibly been in contact with mice.  The  family thought it was stored 
inside the house but are unsure who actually  moved it outside.)  We want to 
at least bring it back to use as a serving  tray or to sit on the dining room 
table.  Sorry, but the wood type is  unknown.  Help?  I can easily take 
pictures if that would help someone  give us suggestions.
