While it's not heraldry in the sense described in the original post, one good book is "The White Stag" by Kate Seredy, in which symbolism which would become heraldic in a later era is used throughout in a fictional way tied to historical figures (Attila, Bendeguz, etc.)

I believe the best book to do what you want is probably going to be _Harold the Herald_ by Dana Fradon. It's a children's book on heralds and heraldry and is simply quite delightful.
