While there are more formal answers out there, my QND top-of-Amra's-head
answers:
Torse - the fabric "roll" used in lieu of a circlet to hold a veil or
mantling in place; on "full achievements" of arms, this is typically the
two-colored band that goes around the lemet above the device. (Gerita,
I'm reasonably certain you have seen these as they were constructed for
sale by HG Willow some years ago - I do not use mine often, but one of
the gifts Isobel gave me was a maroon and white torse.)
Mantling - a shorter veil that covers the neck / back of the head. In
French Foreign Legion images as we have received them over more than a
century of film, the fabric attached to the back of the cap to provide
shade for the neck is a descendant of mantling for helmets. (Mantling
as a lesser / diminutive of a full mantle, therefore...)
Mantling may be attached to the torse, or may be held in place over the
helm by a torse, or may be directly attached to other headgear, or may
be held in place by a circlet/crown/combs/hairpins.

I'm definitely in favor of items identifying members of a fighting
group, and not just at major wars. I do confess though, I have no clue
what a torse or mantling are!
