Latin geek jumping in here...

"vivat" is the third person singular present subjunctive of the third 
conjugation verb "vivo, vivere" (to live), meaning "may he/she/it live", 
with the idiomatic meaning of "*Long* may he/she/it live" when used by 
itself (unmodified).

The corresponding plural, according to two different Latin grammars (the 
two I could find out of the three in the house), is "vivant".

One of the grammars even uses the following example... "vivant feliciter 
-- may they live happily".
