[MR] Translation please

Greetings to the Tavern!
   
  Whist reading Apicius, I came across a couple of untranslated passages; and not being adept in any language (and as you can tell from my grammar - English is lacking as well), I am now being bothered by what is not understood.
   
  Could anyone provide me with an accurate translation?
   
  " Que res tota spectat medicinæ partem, que diaitetike appalature, et victu medetur: at in bac (hac?) tes diaitetikes parte totus est Apicius noster."
   
  and the other (so far):
   
  "En hominem in conjecturis sane audacissimus!"
