Good morning,

We are pleased to present the feast menu for the Canton of Elvegast's "Le
Pas d'armes de l'Arbre to Or" which will occur November 10-12 in Leasburg,
NC.  Please pre-reserve now to guarantee your place for this wonderful meal.

This menu is inspired by an extant menu found in the Viviander de Tallievent
for Sir de la Marche, a courtier in the retinues of Charles the Bold and the
gentleman in charge of many of the arrangement for the grand banquets held
in the Burgundian Court.
The original menu, however, consisted of predominantly wild game and fowl
and as such I was not able to present the actual menu.  What I have chosen
to do instead is use the menu as an inspiration... a  guideline, as it
were.  This gave me the number of dishes per course or "Platter" as it was
referred to in the menu.

Other changes became evident as being necessary as work on the menu
progressed (the additions of starches and vegetables) in order to present a
more well-rounded banquet, but the sources, for the most part, remained true
to time period and location.  The foray into English cuisine was a bit of
whimsy on my part... a marriage between Charles and Margaret, the alliance
of Burgundy and England, so the combination of French and English cuisine.

   - Cyseros - (Chickpeas w/Parsley)  - Du Fait du Cuisine

3rd Platter

   - Stuffed Chicken in Creme - Viandier de Tallievent
   - Mushroom Pasties - Le Menagier de Paris
   - Assorted Cheese Plate - Adapted from Extant Menu in Tallievent

4th Platter

   - Roast of Beef in Must Sauce -  Tallievent
   - Wilted Spinach & Watercress  -Tallievent/Menagier
   - Pears in Hippocras - Tallievent/Menagier

5th Platter - Adapted from an extant menu in Tallievent.

   - Sugared Almonds
   - Fresh  Whipped Cream
   - Fresh Fruit
