I've use ginger in several forms.
I have some syrup that is ginger-only, and I used finely divided
ginger (ginger paste). It came out pretty well. I've also sliced up
fresh ginger, although it's always been in addition to the mint.
That Did Not Suck.
I've also substituted fresh strawberries for the flavoring agent.
Again, a serious lack of suckage.
If you're at Pennsic, drop by the booth (133 Plunder Lane, as usual),
and you can sample the ginger-only stuff.
