I am not sure what the exact nature of your concern is. If it is that the grommets at the ridgeline are quite a bit larger than the pins at the peak (at the ends of the ridge pole), then the leather washers could indeed work, but I believe finials would be an even better solution and have the added benefit of enhancing the pavilion's appearance. The pavilion suppiers sell them, or you can make your own or adapt some existing pieces, as we did.
 
I do not know how big your pavilion is. Ours is rather large (roughly 15 X 20, I can never recall the exact numbers), and we use the big ball finials originally designed for decks. Drill a hole in the bottom to accommodate the pin; make it a fairly tight fit. We took it one step farther and included small staffs for pennons. If you'd like a more complete explanation I'll be happy to explain it but don't want to bore the company with it unless I know someone's interested.
