It's true about the first use of 'cavalry' in 1591 in written English, but 
we also have 'cavalier' (as in: a horseman/soldier who rides a horse, aka a 
member of the cavalry) dating to 1470. Then there's 'chevalier' (still 
working from the same root word here, via French! How about 'chevalerie' if 
you really dig French?) back to 1292. 'Chivalry' also comes from this, going 
to 1300.

So you've still got a few options if you don't want to use 'equestrian'.
