I found some very interesting articles online dealing with various topics in
early animal husbandry.

Of course, I'm mostly interested in the Scandinavian stuff, but there were
other interesting articles there and a table of contents at
http://www.svenska-institutet-rom.org/pecus/

Here's the Norse articles:

Scandinavia – and elsewhere?" PECUS. Man and animal in antiquity.

9-12, 2002. Ed. Barbro Santillo Frizell. (The Swedish Institute in Rome.
Projects and Seminars, 1), Rome 2004. pp. 241-249.
