[MR] A Question about Honey?

I am in the process of finding the materials needed to make Mead... mainly
honey.  I would like to make a fairly sweet still mead so will be using 4
pounds per gallon.  My questions is what type of honey makes the best mead?
I have found sites selling both sourwood honey as well as wild flower honey.
Any insite from the spectacular brewers of Atlantia would be appreciated
greatly.
