Try _From the Neck Up_, by Denise Dreher. She doesn't talk about 
period methods for hatmaking, but there is tons of information on 
making all kinds of hats. It is a really good starting point.

Amazon.com lists it as shipping in 4 to 6 weeks, but the Barnes & 
Noble web site says it ships in 24 hours. (http://www.bn.com) 
Some SCA book merchants carry it as well.
