[MR] Question on period coolers at Pennsic

Greetings to the list,

During one of the last Universities I took a class
called "How not to get your friends sick at Pennsic" 
(or something to that extent), which was a great class
on how to organize a kitchen on a Pennsic encampent.

One of the things that the ladies who taught the class
mentioned, was the system of digging a hole in the
ground, putting a tarp on it, and filling it with ice.
 They mentioned that it was great and better than
commercial coolers, since the temperature of the
ground helped keep the food cold better than any
cooler.

Does anyone know how this works?  My question is
regarding what kind of tarp would one use, and how do
you drain it.  Does the ice evaporate or does it melt?

I am not sure yet if we would want to use this method,
but it sounds very intriguing and we may decide to dig
a small hold as a test and try it (of course, we will
be bringing our regular coolers, but this sounds
pretty good).  Heck, this is what happens when you are
planning on going to Land Grab week, and wonder if you
will have too much time on your hands . . .
